Have a salsa bar

Have a brunch theme with muffins, fruit, sliced ham, quiche, etc.

Portions are controlled with refreshment plates rather than a buffet. For
example, place a chicken salad croissant, a couple of fresh berries and a
chocolate truffle on a luncheon plate.

We did a buffet that was very simple but elegant. A simple meat and cheese tray w/ a variety of rolls and 5 exotic salads. Everyone raved over the salads, they were all very different from one another with beautiful colors and textures. It was so good that my husband insisted that we buy the caterer a thank you gift--and she was the only one!!!
